As a passionate home barista who loves making elaborate coffee drinks, I often get questions from friends about how to steam milk properly using their basic espresso machines.
Over the years, through lots of trial and error, I’ve figured out the ideal milk steaming vessel and equipment that helps me create silky smooth microfoam worthy of any cafe. Read on for my tips!
Optimal Milk Steaming Pitcher
When it comes to steaming milk at home, you really can’t beat a classic stainless steel milk steaming pitcher.
I prefer one with a nice spout for pouring latte art, but the key things you want are a durable stainless construction that allows you to swirl the milk forcefully to incorporate air and a surface you can touch to gauge temperature.
Key Factors in a Milk Steaming Vessel
Size Matters!
An accurately sized pitcher or vessel is crucial for nailing the right milk-to-coffee ratio.
Generally, I use a minimum capacity of double the milk being steamed. For example, if I’m making a cappuccino with about 4 oz of milk, I’ll use at least an 8 oz pitcher.
This leaves much room for the milk to expand in volume as it is aerated and heated.
Conducts Heat
You want a container that lets you check the temperature of the milk as you steam it.
The ideal is about 65-70°C. With stainless steel pitchers, I briefly touch the outside to read the temp accurately.
Materials like ceramic or glass don’t conduct heat, making it harder.
Makeshift Alternatives
While specialty pitchers are best, I’ve had decent luck using basic cups and saucepans in a pinch to steam milk.
Just beware that ceramic cups won’t showcase temperature changes. Glass lets you see the milk spinning, but it often gets hot enough to burn your fingers testing it.
Small pans work nicely since you can fit more milk; look for ones with handles or sleeves to grip safely.
